This chicken noodle soup is not just any soup; it’s a delicious bowl of comfort that my family can’t get enough of. Matter fact, they be trying to act sick just to get me to cook up another pot of it!
Why This Soup?
Let’s be real— ain’t no vibe like some homemade chicken noodle soup. It’s the ultimate comfort food, packed with tender chicken, fresh veggies, and hearty noodles. Whether it’s a gloomy day or someone’s feeling a little off, this soup is sure to boost spirits and fill up stomachs.
Ingredients :
**For the Broth:**
- Water (enough to fill the pot)
- 1/2 onion (rough chopped)
- 2 carrots (rough chopped)
- 2 celery stalks (rough chopped)
- 3 garlic cloves
- Sprigs of thyme
- Sprigs of rosemary
- Small bunch of sage
- Gooder Than A Mug Yard Bird Seasoning
- Salt & pepper
- Small bunch of fresh parsley
- 4 Turkey wing tips (or chicken wing tips or bones, if that’s what you have)
- 2 tbsp butter
**For the Soup:**
- 1/2 onion (chopped)
- 2 carrots (chopped)
- 2 celery stalks (chopped)
- 2 bay leaves
- Egg noodles (according to package instructions)
**For the Chicken:**
- 4 thin-cut chicken breasts
- Gooder Than A Mug Yard Bird Seasoning
- Gooder Than A Mug Seasoned Salt
- Olive oil
Directions:
1. **Start with the Broth:**
- Wrap your onion, carrots, celery, garlic, thyme, rosemary, and sage in a cheesecloth. This little bundle will add tons of flavor to your broth.
- Place the bundle into a large pot filled with water, along with your chicken tips or bones, butter, and some fresh parsley.
- Season with Gooder Than A Mug Yard Bird Seasoning, salt, and pepper.
2. **Cook It Up:**
- Bring your pot to a boil and skim off any impurities that rise to the top. We want a nice, clear broth!
- Once boiling, cover the pot, reduce the heat, and let it simmer for 30 minutes to an hour. The longer it simmers, the richer the flavor.
3. **Strain and Add More Goodness:**
- After simmering, take out the turkey wing tips, cheesecloth, and any large pieces of parsley. You’re left with a broth so good you’d wanna put in a mug and sip like it’s tea!
- Add in your chopped onion, carrots, celery, and bay leaves. Bring it back to a boil, and once it’s bubbling, toss in the egg noodles and cook according to package instructions.
4. **Let’s Talk Chicken:**
- While the soup is cooking, season your chicken breasts with Gooder Than A Mug Yard Bird Seasoning and Gooder Than A Mug Seasoned salt.
- Heat some olive oil in a frying pan, add the seasoned chicken breasts, and cook until they’re browned on the outside and cooked through.
- Remove and cut the chicken into bite-sized pieces.
5. **Finish It Off:**
- Add the chopped chicken into the soup, and if you’re feeling generous, toss in some extra chopped parsley for that fresh touch.
- Give it a taste and adjust the seasoning with more salt and pepper if needed.
