Monday Motivation



Happy New Year, Family!


It was a harsh 2020 but thank God we all made it through and are here in 2021 ready to tap into out full potential to get everything that we may have lost last year. It's time to make moves and take chances. It's time to live! Most of all, it's time to use that hustler's mentality that was induced by a hellish 2020 to cash out on life! Let's go, Cuzzos!!


I don't know about you, but I put on way too much weight over the past several months. I'm not really one who's in to superstition or resolutions but I gotta drop weight. We don't need the change of a calendar day to make us realize that. If you see something about yourself that needs to be fixed, fix it. The turn of the days can't dictate when you should improve yourself. Only you can do that. That should be the life goal; continual self improvement and constant unconditional self love! I'm talking to myself too! Lord knows I need to hear this!


I'm changing my eating habits. Don't worry, though. This isn't another one of those health food blogs that encourages you to starve yourself and eat rabbit food every day. I will, however, share with you some of the recipes that I whip up like the one below. I won't call it dieting either because its good eating with fresh, and clean ingredients. I tried out the new GTAM Greek Seasoning on some salmon and veggies. The seasoning gave the dish a level of good tasting freshness that you just can't imagine. It was like the meal was prepared and seasoned by chef angels and delivered to me straight from heaven. I literally sat in silence and chewed every bite slowly, with my eyes closed in an attempt to make the taste last forever. What's even "gooder" is that the entire meal was clean and healthy! Roasted Greek Salmon and Veggies


Ingredients:


1 pound Fresh Salmon (Skin optional)

1/2 pound Mixed potatoes cut into wedges (Purple, red, white, and yellow creamer potatoes)

1 Zucchini sliced in to 1/2 in wedges

1/2 Red bell pepper chopped (You can also use 3 sweet peppers of each color)

1/2 Yellow bell pepper chopped

1/2 Orange bell pepper

1 Small bunch of cocktail tomatoes on the vine

1 Small bunch of fresh basil, chopped

2 1/2 TBSP fresh parsley, chopped

6 Garlic cloves, minced

Olive oil

GTAM Greek Seasoning

GTAM Seafood Seasoning

Salt & pepper to taste


Directions:

  1. Preheat oven to 400°.

  2. Add cut up potatoes, half of the minced garlic, and parsley to a mixing bowl. Drizzle with olive oil and season with GTAM Greek Seasoning, and salt and pepper to taste. Tumble with your hands until thoroughly combined.

  3. Spread the potatoes evenly on a baking sheet lined with parchment paper and transfer to the preheated oven for about 10 minutes.

  4. While the potatoes are doing what they do in the oven, go ahead and add the zucchini, peppers, fresh basil and garlic to a mixing bowl. Season with the GTAM Greek Seasoning and salt and pepper to taste. Drizzle with olive oil. Gently mix to combine the flavors.

  5. Drizzle olive oil over the vined tomatoes and season with; you guessed it ~ the GTAM Greek Seasoning. Salt & pepper to taste.

  6. After 10 minutes, use a spatula to gently turn the potatoes then add the tomatoes, zucchini and peppers making sure that you leave a little space for the salmon. Return to the oven for and additional 10 minutes.

  7. Lightly season the salmon with the GTAM Seafood Seasoning on both sides. Pat the seasoning into the salmon with a little finesse. Then generously add the GTAM Greek Seasoning on both sides and pat it in just like you did the seafood seasoning. (make sure you coat the sides of the salmon with any excess seasoning. Leave no seasoning behind!

  8. Add the salmon to the baking sheet and return to the oven for another 7 minutes.

  9. Finally, set the oven to broil for about 2 minutes to give the salmon a rich light brown color and slightly crispy texture. Don't over cook the salmon! No one likes dry ass salmon! The salmon should be juicy and flake away easily when its done.
